This salmon recipe is baked with lemon garlic butter to take it to a whole different level of deliciousness. I served the lemon garlic salmon with roasted potatoes and sautéed greens. You will absolutely love this recipe.
INGREDIENTS
- 2 lbs Salmon
- Salt and pepper to taste
- 3 cloves garlic, minced
- ½ cup softened butter
- Juice of 2 freshly squeezed lemons
- 1 lemon sliced (set aside half to garnish)
- Fresh parsley to garnish
DIRECTIONS
- Heat oven to 400°F
- Remove the salmon from the refrigerator and let stand at room temperature for 10 minutes while you prepare the other ingredients.
- In a rimmed baking sheet, place a large sheet of foil (enough to fold envelope the salmon), place the salmon on the foil, and season with the salt and pepper.
- Mix the minced garlic with the butter and spread generously all over the top of the salmon.
- Juice two lemons, then pour the juice over the top. Pro tip: Be liberal with the lemon juice!
- Place half the sliced lemon on top of the salmon.
- Fold the sides of the aluminum foil up and over the top of the salmon until it is completely enclosed. If your piece of foil is not large enough, place a second piece on top and fold the edges under so that it forms a sealed packet. Leave a little room inside the foil for air to circulate.
- Bake the salmon for 15-20 minutes, until the salmon is almost completely cooked through at the thickest part. The cooking time will vary based on the thickness of your salmon. Check several minutes early to ensure your salmon does not overcook.
- Remove the salmon from the oven and carefully open the foil so that the top of the fish is completely uncovered (be careful of hot steam). Change the oven setting to broil, then return the salmon to the oven and broil for 3 minutes, until the top of the salmon and the garlic are slightly golden, and the salmon is cooked through.
- To serve, cut the salmon into portions. Garnish with the fresh parsley and top with the remaining slices of lemon.
